Which show was China-Rider taken from? I have always been curious to know
how the "untouched" version sounded ...

methinks it was 5/3/72, Paris. There are circulating tapes ... er,
CDs, I think you call them nowadays? Anyway, um, look up "Gans
Honeymoon Tapes" for the sordid story of soundboards which ended up
with the Europe '72 tracks being inserted to replace the original
recordings.

No, I don't know why.

No, I don't know if more recently circulated versions have had the
Europe '72 album tracks removed and replaced by the untouched
versions.

Yeah, I'd like to hear it too....

A Bass violin, a standup bass, is tuned so that it's
lowest string sound "double E", third E below middle C. A double
E waterfall is a waterfall that's so big it sounds the lowest bass
notes instead of the tinkling upper registers or more subtly moving
liquids...

I always pictured the double E image as a standup bass too, with the S shaped sound holes looking like two waterfalls on a woman's back and the strings along her spine.

Ha,,,I have some of those and always wondered why that was done...I will look
up that story...Is that the story about the house being broken into during his
honeymoon and the show were stolen, copied , then returned or some
thing?..LOL>.....that was a funny story...

"Dick: <...> 9/28[/72] was one I got from Kid when I first met someone
in The Grateful Dead in '79 and I coaxed him out of that show, and I
gave it to five friends who I thought would never give it out and then
and of course, we know what happens when you give a tape out to a
Deadhead taper. I mean let's discuss the phenomenon of tape collecting
and trading. I mean, do you rob your neighbor of his tape collection
because he has it and he won't give it to you? Is he an idiot for
having it and not giving it to you?

[jambands.com]: What I think Dick is referring to here is an incident
known as *The Honeymoon Tape Theft* Apparently, David Gans, host of
The Grateful Dead Hour and author of Playing in the Band, returned
from his honeymoon to find that someone had broken into his home and
robbed him of some uncirculated reels of shows from 1972, specifically
Paris, 5/3 and 5/4. These reels were on loan to him from Dick Latvala
for use on The Grateful Dead Hour. Gans later found out who the thief
was -- a neighbor and friend of his that had access to his home while
he was away. The whole incident sparked much debate within the
Grateful Dead taping community over whether or not this thief was
doing wrong or, that he was freeing the music for all of us to hear."

This is correct.
Jack Straw, China Cat Sunflower, I Know You Rider and Tennessee Jed were
all from Olympia Theatre- May 3, 1972

I had heard somewhere that the double E waterfall refers to the water tanks
along the railroads, A double E waterfall was a shower for a weary railroad
worker.

Here are more theories after a google search:

I think it has multiple resonances, like all good Hunter lyrics.

Besides the painting, a guitar has two E strings. Clearly Garcia played
"double E waterfalls" at times with his extremely liquid playing. No?

It could also be a reference to a train, the same train that Dylan
references in It Takes A Lot To Laugh, It Takes a Train To Cry: "Don't
the brakeman look good, mama, Flagging down the 'Double E'?"

By that I just mean torrents of falling, liquid notes.

Double E (A,B,C,D,EE) refers to a ticket you had to buy at Disneyland and pay big bucks to get on the "good" rides back in the day. How do I know this?, I asked Jerry at a diner one night when I met him.
